CHICKEN ALFREDO PIZZA



For awhile this was made at one of the local pizza chains. You could only buy them in the winter for some reason. It is probably my favorite pizza. Most people think it is awesome!!!

Two thin crusts – I usually use Mama Mary’s from Wal Mart
1 jar Alfredo sauce – what ever flavor you would like
2 small can of mushrooms or a cup of fresh mushrooms
1 small can of black olives - chopped or sliced
1 chopped green pepper (optional)
1 large onion – chopped fairly small
1 regular size can of spinach well drained (optional, but try it) or fresh spinach leaves or ½ pkg. thawed frozen, well drained. Squeeze out the extra moisture from the canned or frozen.
1 large chicken breast pre cooked and cut up or 2 cans of chicken (You could also use shrimp instead.)
Italian seasoning
2-4 cups cheese of your choice, but the white cheeses are the best, but I use a mix also.

Precook the raw chicken and chop into about ½ inch pieces. Chop onion, green peppers and mushrooms and sauté until onion and pepper is nearly done. Add chicken to warm it up. Spritz or rub olive oil on crust. Top crust with ½ jar Alfredo sauce for each pizza. Spread on the chicken, onions, green peppers, mushrooms, and spinach. Top with cheeses and sprinkle with Italian seasoning. Bake as directed on the crust package or until done (DUH?). Sprinkle with Parmesan cheese and salt and pepper to taste.

I had a minute to sit and figure what this gourmet treat cost me:
2 Crusts used one, one in fridge $1.74
½ jar Alfredo sauce .55
½ small can black olives .39
½ small onion chopped .25
½ small can mushrooms .27
1-2 cups cheese 1.50
1 small can spinach .82
½ Chicken Breast pre cooked and chopped. $1.50?

Total of LARGE GOURMET pizza $7.02.

So what about the “leftover” stuff?

The rest of the “leftovers” were mixed together and served over egg noodles, which was enough for 2 meals for later in the week. It went into the freezer for my TV dinners. 2 dinners for about $2.40 each. Added a few sliced tomatoes from the garden and a glass of milk.
If I had eaten this meal out I would have paid at least $6 - 8 for the chicken alfredo, several dollars for the milk and there would not have been vine ripened tomatoes!

Yes, it took a bit of thinking of what to make with the “leftovers”, which are not really leftovers at all.
